— Wang Bei, fourth-generation inheritorZhenxifang brews strictly by the 24 solar terms: koji is made in the dog days of summer, the grain goes into earthen vats at Cold Dew, and the vinegar ages through the depths of winter — a complete cycle of 6–10 months. No blended acetic acid, no preservatives, pure grain fermentation that keeps its natural live cultures.

Zhenxifang — a name that carries the memory of four generations.
In Chengxi Village, Qiaoling Town, Pucheng County, this way of brewing corn vinegar has been passed down for nearly a century. From the great-grandfather's craft, to the grandfather's perseverance, to the father's keeping — today it rests in the hands of the fourth-generation inheritor, Wang Bei.
Shaanxi Zhenwei Xiyou Food Co., Ltd. sits in Qiaoling, Pucheng — heartland of the Tang mausoleum cultural belt. It is a local enterprise uniting traditional corn-vinegar R&D, hand brewing, brand sales, intangible-heritage transmission and a planting cooperative. Guided by the founding mission of keeping the old ways, carrying the heritage and brewing for health, it pairs the brewing wisdom of the Qimin Yaoshu with the craft standards of Tang-dynasty tribute vinegar — using modern science to guard the essence of the old method and carry Pucheng's thousand-year brewing culture nationwide.
Brewed by time, carried by craft — a thousand years of vinegar culture returns to the modern table
One jar of traditionally brewed vinegar holds half a book of everyday heritage.
Rooted in the cultural soil of Qiaoling in Pucheng and heir to a thousand years of grain-brewing craft from the Guanzhong plain, we are a family of vinegar makers four generations deep. We keep to natural fermentation and refuse industrial shortcuts, artificial blending and forced ripening. Time is our yeast: it strips away the harsh bite of industrial vinegar and locks in the grain’s true nutrition and living cultures.
We believe good vinegar is a gift of time and the reward of generations of devotion. A jar of naturally living aged vinegar carries the ancient wisdom of food as medicine — and the honest, unpretentious heart of Zhenwei Xiyou.
A thousand-year orthodox process. Neither fossilised nor revived as pastiche — modern science protects the essence of the old method.
Sustaining Pucheng’s vinegar culture so the grain-vinegar lineage of Guanzhong passes to the next generation.
Living vinegar: zero additives, high activity, authentically brewed — a thousand-year flavour back on the modern table.
Born of grains, flourishing in the Han and Tang, recorded in classical texts — China's millennium-old treasure of food-as-medicine wisdom
Heita, son of the wine sage Du Kang, sealed leftover grains in a clay vat; after twenty-one days of natural fermentation, a fragrant, mellow new flavour emerged. Because it was born in the You hour after twenty-one days, it was named “cu” — vinegar.
In the Northern Wei dynasty, Jia Sixie's Qimin Yaoshu (the chapter on making zu) systematically recorded twenty-three ancient vinegar-making methods. The philosophy of “grains as the foundation, starter as the bone, water as the veins, time as the soul” has been handed down ever since.
In the Kaiyuan era of the Tang dynasty, the court established the Zhangxi vinegar bureau and brewing entered the state ritual codes. With rich soil and a deep brewing tradition, Pucheng became the core region of imperial tribute vinegar, following the four-season rhythm: starter in spring, aroma in summer, transformation in autumn, ageing in winter.
The Tang poet Bai Juyi, while living near Pucheng, praised the local vinegar and composed an acrostic verse. Read together, the first character of each line says “long life, free of ailments” — poetic proof that Pucheng vinegar has always been pure in taste and gently nourishing.
长生殿上竞争传老来齿衰嫌茶淡无契之处谁相依疾酢倍觉酸胜甜
Neither fossilising the past nor abandoning it: we decode traditional craft with modern science and recreate the authentic taste of a thousand years. Single-origin corn from the loess highlands of the Weibei plain, solid-state starter shaping and slow liquid fermentation in clay vats, recreates the gentle acidity and long finish of ancient vinegar.

The main differences are the raw material and the fermentation method. Most aged vinegars use sorghum and a fully solid-state fermentation. Zhenxifang's Pucheng traditional corn vinegar uses corn from our own fields as the primary material and a two-stage process — solid first, then liquid: barley malt draws the sugars out of the corn, and the liquid then ferments and ages in earthen vats for 6–10 months. The result is a softer acidity with a sweet corn finish rather than a sharp, one-dimensional sourness.
Because the whole process follows the 24 solar terms: koji is made in the high heat of the dog days, letting the mould cultures multiply naturally in the earthen vats; at Cold Dew, when the weather turns mild, the steamed corn and koji go into the vats to begin fermenting; through deep winter the low temperature lets the vinegar mature slowly; and only in the following spring is the vinegar drawn off. Nothing is rushed or heated along the way — time itself is part of the flavour, and that is the biggest difference from industrially accelerated vinegar.
Its soft acidity and sweet corn finish make it very versatile: dressings for cucumber, wood ear and cold noodles stay fresh without being overpowered; it cuts the richness of dumplings, buns and lamb soup; and added to braises and stews it tenderises meat and adds depth. In Pucheng it is traditionally served with shuipen lamb. Our aged vinegar series is deeper and more mellow — better for braising, stewing and dipping.
Keep it in a cool, dark place with the cap tightly closed, away from direct sunlight and heat. Because naturally fermented vinegar contains no preservatives, prolonged contact with air can form a thin film on the surface — sometimes called vinegar skin or mother. This is normal activity of acetic acid bacteria and yeast, a common feature of natural fermentation; simply strain it off and the vinegar is still fine to use. We also recommend avoiding long-term storage in metal containers.
No. Zhenxifang insists on pure grain natural fermentation: no blended acetic acid, no preservatives, no colourings and no flavourings. The corn comes from nearly 100 mu of our own fields, so moisture content and mould rates are controlled at the source. Fermentation happens entirely in earthen vats sealed with clay, because the breathable vats suit natural microbial growth. That is also why it takes 6–10 months to make.
